Ask an AI assistant for a restaurant recommendation and there’s an 83% chance the place you’d have suggested simply doesn’t exist to it.
That’s Uberall’s finding from this year, from a benchmark of 300+ quick-service chains across 4 markets: 83% of restaurant locations never appear in AI-generated recommendations at all. They’re not ranked lower. They’re not on page two. They’re simply absent.
And it’s not because they’re offline. 86% of those invisible restaurants have a presence on Google.
Meanwhile the guests aren’t waiting. BrightLocal found 45% of consumers now use AI assistants for local recommendations, up from 6% a year earlier. DoorDash’s 2026 trends report says 22% of US consumers have already used AI to choose a restaurant. OpenTable’s says 44% of Americans plan to use AI for restaurant discovery more this year than last. That’s almost half of your potential guests.
So why does a restaurant with a decent Google profile disappear? Because AI assistants don’t read the web the way Google ranks it. When they recommend restaurants they draw on three different sources, and the one they use depends on the question being asked. Editorial coverage answers “best restaurants in Manchester”. Reservation platforms answer “table for four tonight”, because they hold structured availability the AI can actually read. Review sites answer “best Thai near me”. A restaurant can be strong in one and absent from the other two.
And there’s a ratings threshold. Uberall found ChatGPT mostly recommends businesses rated 4.3 stars or higher, Perplexity 4.1, Gemini 3.9. That’s not a preference. It’s close to a floor.
So what’s the fix? Data. Complete, consistent information everywhere AI systems read: your Google Business Profile, your menu in a format machines can read rather than a PDF, your reviews, your listings, your reservation platform’s feed. Keeping all of that in order is pretty dull work, but it decides whether you exist in the channel your guests are moving to.
Start with a test that costs nothing. Ask ChatGPT and Gemini what they’d recommend in your area for the kind of restaurant you run. If you’re not in the answer, you’ve found the problem.
